2 teaspoons of ground ginger
1 teaspoon of ground nutmeg
1 teaspoon of bicarbonate of soda
1 cup soft brown sugar
6 tablespoons golden syrup
2 eggs
5 tablespoons lard
just over 1/4 pint water
(see measure conversions for more information)
- Sift together the flour, spices and bicarbonate of soda.
- Beat together the sugar, syrup and eggs.
- Melt the lard in the water in a saucepan.
- Pour this over the sugar mixture.
- Stir this new mixture into the dry ingredients.
- Mix well.
- Transfer to the cake tin and bake for about an hour at 180 degrees centigrade (see temperature conversions) for 1 hour.

How to make ginger sponge cake:
Although this is called ginger cake it is in fact a recipe for what is today termed "gingerbread". This is a raised, moist, spicy cake unlike the ancient fairing type ginger breads.
Ingredients
2 1/2 cups all purpose flour2 teaspoons of ground ginger
