2oz light soft brown sugar
2 tablespoons golden syrup
2 eggs beaten
4oz self raising flour
1/4 teaspoon baking powder
1/2 teaspoon ground ginger
3oz orange, lemon or ginger marmalade
a little icing/confectioner's sugar
(see measure conversions for more information)
- Melt the brown sugar, butter and syrup together in a saucepan.
- Allow to cool a little.
- Add the eggs to the sugar, butter and syrup mixture.
- Fold in the flour and mix well.
- Put the mixture into 2 x 7 inch, well-greased sandwich tins.
- Bake at 200 degrees C. for 20 minutes.
- Sandwich together with the marmalade and a little icing sugar.

For lovers of marmalade this is an ideal cake. Another version of the cake is made with lime marmalade which is equally delicious and of course there is always plain old orange marmalade for traditionalists.Ingredients
