2oz light soft brown sugar
2 tablespoons golden syrup
2 eggs beaten
4oz self raising flour
1/4 teaspoon baking powder
1/2 teaspoon ground ginger
3oz orange, lemon or ginger marmalade
a little icing/confectioner's sugar
(see measure conversions for more information)
- Add the eggs.
- Fold in the flour mixture.
- Put the mixture into 2 x 7 inch, well-greased sandwich tins.
- Bake at 200 degrees C. for 20 minutes.
- Sandwich together with the marmalade and a little icing sugar.

How to make ginger marmalade cake:
For lovers of marmalade this is an ideal cake. Another version of the cake is made with lime marmalade which is equally delicious and of course there is always plain old orange marmalade for traditionalists.
Ingredients
4oz butter2oz light soft brown sugar

Method
- Sift the flour with baking powder and ginger.- Add the eggs.
- Fold in the flour mixture.
- Put the mixture into 2 x 7 inch, well-greased sandwich tins.
