1 cup caster/superfine sugar
3 cups self raising flour
1/2 cup currants
1/2 cup candied peel
1/2 cup sultanas
1/2 cup blanched chopped almonds
2 tablespoons glace cherries
4 eggs
1 wineglass milk
a little lemon juice
(see measure conversions for more information)
- Beat in the eggs.
- Stir in the sifted flour.
- Add the fruit, milk and lemon juice.
- Pour in a square, well greased tin (about 8 1/2 inches x 2 1/2 inches depth).
- Sprinkle the top of the cake with the almonds.
- Cook for about 2 hours at 180 degrees C. (see temperature conversions).
