1 tablespoon butter
2 eggs
any kind of jam/jelly
enough short crust or rough puff pastry to line pie dish
1 heaped tablespoon flour
1 tablespoon caster/superfine sugar
1/4 pint of milk
1 teaspoon grated lemon rind
(see measure conversions for more information)
- Put a layer of jam at the bottom.
- Cut the sponge cakes in slices and place them on the jam.
- Melt the butter in a pan, add the flour and blend well without browning.
- Gradually stir in the milk.
- Stir rapidly until this thickens and forms a ball in the centre of the pan.
- Remove from heat and cool slightly.
- Add yolks of the eggs, beating each in well.
- Add the grated rind of a lemon and the sugar.
- Whisk the whites of the eggs to a stiff froth and stir in lightly.
- Bake in oven at 150 degrees centigrade (see temperature conversions) for about 1/2 hour or until set.
