How to make Game Pie:
A very seasonal dish. Ready prepared boned and diced game is available from most supermarkets. You can mix different meats according to your taste or you can make it from one meat. If you are not a fan of game then just substitute with your favourite meat.

Ingredients

Game Pie
3/4 lb puff pastry
1lb mixed, diced game
stuffing balls
flour
salt
pepper
olive oil
(see measure conversions for more information)

Method

- Put 2 tablespoons of flour onto a plate.
- Season generously with salt and pepper.
- Roll the diced game in the seasoned flour.
- Heat the olive oil in a heavy saucepan.
- Brown the game in the oil over a low heat.
- Add enough stock to make a thick gravy.
- Cover and simmer until the game is cooked and tender.
- Make up stuffing and when cool form into little balls.
- Add to the simmering game.
- Roll out pastry and use to line a suitable pie dish.
- Fill with the game and stuffing balls.
- If you have a lot of gravy do not put too much in the pie but rather reserve for use when serving.
- Put a pastry lid on the pie.
- Brush with a mixture of egg and milk.
- Bake at about 220 degrees C. until the pastry is well risen and golden brown.

I can now take the phone books out of my overflowing 2 shelves I keep my cookbooks in: then...
