How to make fruit and nut caramel:
A soft caramel sweetened with dried fruits and golden syrup. See Cooking with Sugar for information on the tricky process of boiling sugar.

Ingredients

Method

- Melt the butter in a heavy based saucepan.
- Add the syrup and honey, bring to the boil and boil to 137oC/270oF or until a soft drop in cold water forms a soft ball between the fingers.
- Remove from the heat, stir in the walnuts and dates and beat until opaque.
- Pour into a greased and lined shallow 8 inch by 5 inch tin and leave to cool.
- When almost set, cut through into squares.
- Store in waxed paper.
