Fruit and nut Bars Recipe

A really rich bread, full of nuts, honey and mango. Cut it into slices and enjoy with tea or coffee breaks.


  • 1lb strong white bread flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1oz milk powder
  • 8oz chopped mango
  • 1/2 oz fresh yeast
  • 2 tablespoons melted butter
  • 1 beaten egg
  • 1/2 pint warm water

  • For topping:
  • 2 tablespoons mango chutney
  • 1 tablespoon honey
  • 4oz cashew nuts

  1. Put the dry ingredients (not including topping ingredients) into a bowl.
  2. Add the mango.
  3. Separately cream the yeast with a little of the warm water.
  4. Add to the dry ingredients.
  5. Add the egg, butter and remaining water.
  6. Turn onto a floured board and knead until smooth and elastic.
  7. Roll the dough to fit an 8 x 12 inch Swiss roll tin.
  8. For the topping mix together the mango chutney, honey and cashew nuts.
  9. Spread onto the dough.
  10. Leave to rise in a warm place.
  11. When the dough has doubled in size bake at 190 degrees C. for 25 minutes.

Prep Time: 120 minutes

Cook Time: 25 minutes

Yield: depends on size of bars
