How to make fruit and nut loaf:
A really rich bread, full of nuts, honey and mango. Cut it into slices and enjoy with tea or coffee breaks.


1lb strong white bread flour
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1oz milk powder
8oz chopped mango
1/2 oz fresh yeast
2 tablespoons melted butter
1 beaten egg
1/2 pint warm water

for topping:

2 tablespoons mango chutney
1 tablespoon honey
4oz cashew nuts

- Put the dry ingredients (not including topping ingredients) into a bowl.
- Add the mango.
- Separately cream the yeast with a little of the warm water.
- Add to the dry ingredients.
- Add the egg, butter and remaining water.
- Turn onto a floured board and knead until smooth and elastic.
- Roll the dough to fit an 8 x 12 inch Swiss roll tin.
- For the topping mix together the mango chutney, honey and cashew nuts.
- Spread onto the dough.
- Leave to rise in a warm place.
- When the dough has doubled in size bake at 190 degrees C. for 25 minutes.
