1 pint thick double cream
icing/confectioner's sugar
(see measure conversions for more information)
- Put the raspberries into a food processor or blender.
- When they are chopped to an icy powder slowly add the cream.
- The fruit and the cream will blend together and the fruit will freeze the cream.
- Taste the mixture at an early stage (remember to switch off the machine) and add enough icing/confectioner's sugar to sweeten the dessert.
- Continue to process until a smooth ice cream texture is achieved.
- Serve immediately or freeze for no more than 2 days (ice crystals will form).
- Serve with nice, thick pompadour wafers.

How to make frozen raspberry cream:

- If using fresh raspberries freeze them for at least one day.- Put the raspberries into a food processor or blender.
- When they are chopped to an icy powder slowly add the cream.
