3/4 cup breadcrumbs
2 tablespoons Demerara sugar
5 tablespoons butter
a little extra butter
1 large egg, well beaten
(see measure conversions for more information)
- Stew with the sugar until soft.
- Remove from the heat.
- Add the butter and the egg.
- Grease an ovenproof dish and put half of the breadcrumbs onto the base.
- Pour the apple mixture onto this and then cover the apples with the rest of the breadcrumbs.
- Dot over with small pieces of butter.
- Bake at 190 degrees Centigrade (see temperature conversions) for 30 minutes.

How to make Friar’s Omelette:
The use of the word omelette is misleading here because egg only plays a small part in this dish. Apples are the main ingredients and rather than being fried this is baked in the oven.
Ingredients

- Peel, core and slice the apples.- Stew with the sugar until soft.
- Remove from the heat.
- Add the butter and the egg.
- Grease an ovenproof dish and put half of the breadcrumbs onto the base.
- Pour the apple mixture onto this and then cover the apples with the rest of the breadcrumbs.
- Dot over with small pieces of butter.
- Bake at 190 degrees Centigrade (see temperature conversions) for 30 minutes.
