2 heaped tablespoons flour
salt

half pint milk
chopped, cold pork
chopped parsley
mashed potatoes (hot)

- Make a thick white sauce using the melted bacon fat, the flour and the milk.
- Season with salt and pepper.
- Add the pork.
- Put the mashed potatoes on a plate heaping them towards the edge of the plate leaving a space in the centre.
- Spoon the pork mixture into the centre of the potatoes.
- Garnish with parsley.
