enough gelatine to set 2 pints liquid (see packet for instructions)
1 pint water
1 pint cream
1 1/2 tablespoons caster/superfine sugar
1 tablespoon orange flower water
(see measure conversions for more information)
- Grind the almonds in a blender.
- While grinding gradually add the water and the orange flower water.
- Put into a saucepan.
- Add the sugar and gelatine.
- Bring to the boil, stirring all the time.
- Strain through muslin.
- Allow to cool.
- Add the cream and stir often until on the point of setting.
- Pour into a mould and allow to set in fridge.

How to make flummery:
A very ancient English dessert. The use of almonds shows that this was once quite a luxurious dish. Originally bitter almonds were used with the sweet almonds. Bitter almonds would not now be used as they contain prussic acid.
Ingredients
one handful almondsenough gelatine to set 2 pints liquid (see packet for instructions)
1 pint water
1 pint cream
1 1/2 tablespoons caster/superfine sugar
1 tablespoon orange flower water

Method
- Blanch the almonds.- Grind the almonds in a blender.
- While grinding gradually add the water and the orange flower water.
- Put into a saucepan.
- Add the sugar and gelatine.
- Bring to the boil, stirring all the time.
- Strain through muslin.
- Allow to cool.
- Add the cream and stir often until on the point of setting.
- Pour into a mould and allow to set in fridge.
