1 cup oatmeal
1 teaspoon baking powder
salt and black pepper
2 cups flour
2 tablespoons shredded suet
anchovy essence to taste
2 tablespoons finely chopped parsley
(see measure conversions for more information)
- Season the fish with salt and pepper and add some anchovy essence.
- Mix in the chopped parsley.
- Check the seasoning by tasting.
- Put the flour, oatmeal, suet and baking powder into a bowl and mix together.
- Make the dry ingredients into a stiff dough by adding a little water.
- Put the dough onto a floured board and roll out into an oblong shape.
- Spread the fish mixture onto the dough and then roll up.
- When made into a neat roll press all the edges together and then place in a floured cloth.
- Tie the ends of the cloth together and then boil gently in water in a saucepan for about 2 hours.
- Serve hot with a white sauce or parsley sauce.

How to make Fish Roly-Poly:
The most British of all dishes - the boiled pudding. Not so popular nowadays but delicious on a cold day nevertheless.
