How to make Farmer's Sausage Casserole:
For this hearty main meal use your favourite sausages or at least a good quality sausage. Make sure that the wine you use is one you would be happy to drink


Farmer's Sausage Casserole
1lb sausages
2 tablespoons olive oil
2 onions, peeled and sliced
1 tablespoon plain flour
1 cooking apple, peeled, cored and sliced
4 tomatoes, skinned and sliced
4 rashers streaky bacon, chopped into small pieces
half green pepper, deseeded and sliced
1 clove garlic, peeled and crushed
4oz mushrooms
half bottle red wine
salt and pepper
(see measure conversions for more information)


- Cook the sausages until browned (fry, grill or bake as preferred).
- Fry the onions in the olive oil in a frying pan until golden brown.
- Add the flour.
- Remove from heat and add the sausages, apple, tomatoes, bacon, green pepper and garlic.
- Put into an ovenproof casserole dish and add the wine.
- Season well with salt and pepper.
- Put the lid on the casserole and cook at 190 degrees centigrade for 45 minutes.
- Remove from oven and add the mushrooms.
- Cook for a further 20 minutes.
