2 tablespoons caster/superfine sugar
2 eggs separated
2 tablespoons butter
1 lemon
1 pint milk
2 tablespoons apricot jelly
6 glace cherries
(see measure conversions for more information)
- Take from the heat and add the butter, half of the sugar and the grated rind of half of the lemon.
- Allow the mixture to cool and then beat in the egg yolks.
- Spread the jam onto the bottom of a greased ovenproof dish and spoon the rice over it.
- Whisk the egg whites until stiff.
- Fold in the rest of the sugar and pile the mixture onto the rice.
- Cut the cherries in half and use to decorate the meringue.
- Bake at about 160 degrees Centigrade (see temperature conversions) for 30 minutes.

How to make Empress pudding:
Not a particularly well known pudding but very nice to try for a change.
