How to make egg, bacon and leek pie:
This is very similar to a quiche and can be served in a similar way as a main meal or a lunchtime snack with salad.





Ingredients

shortcrust pastry made from 1 cup flour and 4 tablespoons fat
2 large leeks
6 rashers bacon
4 large eggs
salt
pepper
freshly grated nutmeg

Method

- Wash the leeks very thoroughly and slice thinly.
- Dice the bacon.
- Line a greased 7 inch round pie dish with the pastry.
- Layer the leeks and the bacon onto the pastry.
- Carefully break the 4 eggs onto the leeks and bacon.
- Season with salt pepper and nutmeg.
- Bake for about 40 minutes at 200 degrees centigrade (see temperature conversions). - Serve hot or cold.
