How to make dill sauce:
Use this with any fish. It is suitable for any white or oily fish and would also go well with seafood such as prawns and calamari.


8 fluid oz crème frâiche
1/4 pint soured cream
4 chopped spring onions
2 tablespoons of finely chopped dill
(see measure conversions for more information)


- Chop the spring onions very finely and mix carefully with all the other ingredients.
- Season to taste.
- Serve as an accompaniment to fish.
