How to make wholemeal digestive cookies:
Another variation on the digestive cookie to try. Again this is a traditional cookie, the purpose of which was to satisfy people's appetites economically. They do not taste like commercially made cookies.

Ingredients

2 tablespoons butter
pinch of bicarbonate of soda
1/4 pint milk
2 cups wholemeal flour
1 tablespoon caster/superfine sugar
1/4 teaspoon salt
(see measure conversions for more information)

Method

- Warm milk.
- Dissolve bi-carbonate and butter in milk.
- Mix flour, salt and sugar together.
- Add milk mixture to this and mix into a stiff paste.
- Roll out thinly and cut into rounds and prick all over with a fork.
- Put onto a greased baking sheet and bake for 25 minutes at 180 degrees centigrade (see temperature conversions).
- Put on a wire cooling rack and when cool store in an airtight container.

Last year I overcrowded my small veg plot with counter-productive results like mildew and snail infestation that went unnoticed until we came to pick the tomatoes (all holes!).
