How to make oatmeal digestive cookies:
These digestive cookies are made with plain flour with the addition of oatmeal. They are not very sweet buy are satisfying nonetheless.



Ingredients

1 cup plain flour
pinch of salt
1 tablespoon milk
6 tablespoons butter
1 cup medium oatmeal
1/4 teaspoon bicarbonate of soda
1 tablespoon sugar
(see measure conversions for more information)

Method

- Put all the dry ingredients into a mixing bowl.
- Rub the butter into the dry ingredients and mix to a stiff dough with as little milk as possible.
- You may need a little more than one tablespoonful of milk but be very careful because a sticky dough will not roll out easily.
- Roll out thinly on a floured board and cut into rounds with a biscuit cutter or upturned cup.
- Bake on a well greased baking tray and put into the oven at 200 degrees centigrade (see temperature conversions) and cook for about 20 minutes.
- They should be just golden brown. Cool on a wire rack.

I wonder just how much land it would take to feed a family of, say, 4? I know that if my family didn't buy fruit and veg we wouldn't have enough to eat but is self sufficiency down to amount of land or method of growing? Last year I overcrowded my small veg plot with counter-productive results like mildew and snail infestation that went unnoticed until we came to pick the tomatoes (all holes!). I wonder if anyone has ever been totally self providing or whether the local market and barter played...
