How to make devilled crab:
A rich and spicy seafood starter which would also make a light summer lunch served with salad.


6oz crabmeat
2 hard boiled eggs, shelled and finely chopped
2 tablespoons double cream
juice half lemon
cayenne pepper
3oz bread crumbs
2 tablespoons butter
(see measure conversions for more information)


- Mix the crabmeat with the eggs, cream and lemon juice.
- Season with salt and cayenne pepper.
- Add 3/4 breadcrumbs.
- Put into one or several individual ovenproof dishes.
- Sprinkle on remaining breadcrumbs.
- Dot with butter.
- Bake at 350 degrees F. for about 15 minutes.
- Serve hot or chilled with tartare sauce.
