6oz soft brown sugar
8oz all purpose flour
1 1/2 teaspoon baking powder
3 eggs
2oz chopped walnuts
8oz chopped stoned dates
2 tablespoons milk
3 tablespoons milk
8oz icing/confectioner's sugar
1 teaspoon coffee essence
(see measure conversions for more information)
- Cream the butter and sugar until light in colour and fluffy in texture.
- Add the eggs to the creamed mixture one at a time adding a little flour after each egg.
- Beat well.
- Add the rest of the flour.
- Add the walnuts, dates and, milk.
- Mix well to a dropping consistency.
- Put into a round, greased, 7 inch cake tin.
- Bake at 170oC 1 1/2 hours.
- Allow to cool in the tin for 10 minutes.
- Turn onto a wire rack to finish cooling.
- Place over a saucepan of hot water.
- Stir over the water until the mixture is smooth.
- Remove from the heat.
- Beat until thick.
- Spread onto the cake.

How to make date and walnut cake:
A big, fruity, nutty cake. The cake is bursting with flavour and texture and the icing is rich and smooth and flavoured with coffee the flavour that goes so well with walnuts.
