small piece of mace
2lb Demerara sugar
8 cloves
8 peppercorns
1 small teaspoon of salt
1 pint vinegar
(see measure conversions for more information)
- Add all the other ingredients.
- Simmer until quite soft.
- Remove from the heat and allow to cool.
- Push through a sieve.
- Return the pulp to the pan.
- Boil gently for 10 minutes.
- Stir well.
- Remove from heat and allow to cool a little.
- Put into clean jars as for jam.

How to make damson chutney:
A really hot, spicy chutney. Delicious with cheese.
Ingredients
4lb ripe damsonssmall piece of mace
2lb Demerara sugar
8 cloves
8 peppercorns

Method
- Put the damsons into a large saucepan or preserving pan.- Add all the other ingredients.
- Simmer until quite soft.
- Remove from the heat and allow to cool.
- Push through a sieve.
- Return the pulp to the pan.
- Boil gently for 10 minutes.
- Stir well.
- Remove from heat and allow to cool a little.
- Put into clean jars as for jam.
