How to make curry pie:
A really different and tasty way of using up leftovers. Can be made into a vegetarian meal by using leftover vegetables instead of meat.


2 tablespoons butter
1 onion, peeled and sliced
1 apple, peeled and chopped
1 cup stock
1 tablespoon cornflour, mixed to a paste with a little cold water
1 tablespoon curry powder
2 teaspoons sugar
1lb cold left over meat, minced
1 tablespoon chutney
1/2 cup sultanas
mashed potato
salt and pepper

- Fry the apple and onions in 2 tablespoons of butter until browned.
- Sprinkle over the curry powder and fry for a few more minutes, stirring.
- Add the stock.
- Stir in the cornflour paste and sugar.
- Bring to the boil.
- Add the meat, chutney and sultanas.
- Season.
- Simmer a few minutes.
- Put into a well greased ovenproof dish.
- Cover with the mashed potato.
- Bake for about 30 minutes at 190-200 degrees C.
