2 tablespoons olive oil
1 clove garlic, peeled and crushed
1 inch piece fresh ginger, peeled and grated
1 onion, peeled and chopped
2 carrots, peeled and chopped
2 sticks celery, washed and finely sliced
4oz mushrooms, peeled and sliced
about 1/2 teaspoon chilli powder
2 tins chopped tomatoes
salt and pepper
(see measure conversions for more information)
- Add the garlic, onion and ginger and cook gently until soft.
- Add the carrots, mushrooms and celery and cook for a few more minutes.
- Sprinkle in the chilli powder.
- Add the beans and the tomatoes.
- Season with salt and pepper.
- Cook gently for about 20 minutes or until all the vegetables are cooked and the mixture is slightly thickened.
