4 cups wholemeal flour
1 tablespoon baking powder
pinch of salt
6 tablespoons sugar
6 tablespoons currants
2 tablespoons mixed peel
2 eggs
1 tablespoon milk
(see measure conversions for more information)
- Add thesugar, currants and mixed peel.
- Beat the eggs and milk together and mix them well into the other ingredients.
- Add a little more milk if the mixture is too dry.
- Place in a greased loaf tin and bake in a preheated oven at 180oC/350oF/gas mark 4 for 30 to 40 minutes.

How to make currant loaf:
A standard non-yeast currant bread recipe. This is an extremely easy rubbed-in method fruit cake recipe.
