How to make crempog:
These are very easy and quick to make and are similar to pancakes and Durham Pikelets. Can be served with butter, jam/jelly or golden syrup.

1/2 level teaspoon bicarbonate of soda
1/2 pint buttermilk
8 heaped tablespoons plain flour
pinch of salt
1 large egg
2 tablespoons lard
(see measure conversions for more information)

- Mix the bicarbonate of soda into the buttermilk.
- Sift the flour and salt together in a bowl.
- Beat the egg and the bicarbonate/buttermilk mixture into the flour and beat really well for about 5 minutes until a smooth batter is achieved.
- Melt a little of the lard in a heavy frying pan and drop tablespoonfuls of the batter into it.
- Fry until the pancake is golden and has set.
- Turn over to allow other side to cook.
- Keep the Crempog warm and serve with chosen accompaniment.
