How to make crab cakes:
For those who like fish cakes, these crab cakes make a nice change.


1lb crab meat
2 teaspoons Worcestershire Sauce
1 egg yolk
1 tablespoon mayonnaise
salt and pepper
1 teaspoon dry mustard
1 teaspoon finely chopped parsley
1 egg beaten with 1 tablespoon water
oil for frying

- Mix the crab meat with the egg yolk, mayonnaise and parsley.
- Season with salt and pepper.
- Form into fish cake shapes.
- Dip in the flour then in the egg and water mix then in the breadcrumbs.
- Fry in the oil until both sides are golden brown.
