How to make country style rabbit:
The familiar combination of bacon and rabbit go to make this traditional country dish. Simple yet tasty.


4 rabbit pieces
1 tablespoon French mustard
5 rashers bacon
2 onions, peeled and chopped
3 carrots, peeled and chopped
1 small turnip, peeled and chopped
1/2 teaspoon mixed dried herbs
freshly ground black pepper

- Put an 18 x 24 inch piece of foil in a roasting pan.
- Put the rabbit pieces in the centre of the foil.
- Spread them with the French mustard.
- Remove all rind and fat from the bacon and cut it to small ½ inch squares.
- Sprinkle the chopped bacon over the rabbit and add the onions, carrots and turnip.
- Add the mixed herbs and season with pepper.
- Pour over 2 tablespoons of water. - Fold up the sides of the foil and tuck in the edges.
- Cook in oven at 190 degrees centigrade (see temperature conversions) for 1 1/2 hours.
