pinch of salt
3oz butter
2oz caster/superfine sugar
2oz cornflakes
1 egg yolk
1 teaspoon coffee essence
a little milk
2oz icing/confectioner's sugar
1 teaspoon coffee essence
(see measure conversions for more information)
- Rub the butter into the flour.
- Add the sugar and cornflakes.
- Add the egg yolk and coffee essence.
- Add a little milk.
- Mix to form a stiff paste.
- Divide mixture into 24 balls.
- Place on a baking sheet leaving a space between each biscuit.
- Flatten each biscuit slightly.
- Bake at 190 degrees C. for about 15 minutes.
- Allow to cool on a wire rack.
- Cream together the butter and sugar.
- Add the coffee essence.
- Use this to sandwich the biscuits together in pairs.
