1/2 cup caster/superfine sugar
1/2 cup butter
3 tablespoons coffee essence (or try strong black coffee)
(see measure conversions for more information)
- To this add the butter.
- Stir continuously over a low heat, allowing all butter and sugar to melt.
- Bring to the boil.
- Allow to boil gently for about 15 minutes.
- Stir several times.
- Drop a little of the fudge into a saucer of cold water.
- The fudge should form a soft ball.
- Add the coffee or essence.
- Stand to cool for a few minutes then, using a wooden spoon, beat well until the fudge becomes thick and creamy.
- Pour into a greased tin.
- Mark into squares if desired.
