9 tablespoons icing/confectioner's sugar
1 tablespoon cream or milk
white of 1 egg
orange flower water
1 tablespoons ground almonds
coffee essence
olive oil
(see measure conversions for more information)
- Stir among them a large tablespoon of pure olive oil.
- Mix well so that each almond is oiled, and leave for 3/4 hour.
- Place them in a baking tin in a rather hot oven, until nicely browned.
- Turn on to kitchen paper to dry.
- Rub the icing sugar through a sieve, mix with it the ground almonds and cream or milk, and add a few drops of orange flower water, sufficient whipped white of egg to form a paste, and add coffee essence until the mixture is a pretty brown colour.
- Leave for some hours, then roll out the paste, cut small oblong pieces, place an almond in the centre, roll in caster sugar and leave to
dry.

How to make coffee cream almonds:
Delicious roast almonds covered in a nutty, coffee sugar coating. See Cooking with Sugar for information on the tricky process of boiling sugar. N.B. Be careful serving raw egg to vulnerable (i.e. the young and old).
