1/2 cup caster/superfine sugar
1 3/4 cups desiccated coconut
edible rice paper
(see measure conversions for more information)
- Fold in the sugar and coconut.
- Place the rice paper onto a greased baking tray.
- Drop spoonfuls of the mixture onto the rice paper.
- Bake at 335 degrees Fahrenheit (see temperature conversions) for 15 minutes.
- Each cake will have a piece of edible rice paper on the bottom.

How to make coconut pyramids:
The sort of cake that can be whisked up in moments and that is always very popular with children. It is easy to make them even more appealing with the addition of natural food coloring and a glace cherry on top.
Ingredients
2 egg whites1/2 cup caster/superfine sugar
1 3/4 cups desiccated coconut

Method
- Whisk the egg whites until stiff.- Fold in the sugar and coconut.
- Place the rice paper onto a greased baking tray.
- Drop spoonfuls of the mixture onto the rice paper.

As cake recipes go this is pretty simple becasue you are not worrying about the cake rising. As long as you don't burn them they are a good cake to try.
