pinch of cream of tartar
small sized can condensed milk
2 tablespoons grated coconut
1 teaspoon lemon essence
1/2 pint water
(see measure conversions for more information)
- Add the cream of tartar.
- Stir over gentle heat until the sugar has dissolved, then boil for 5 minutes.
- Add the condensed milk and continue boiling until the mixture forms a soft ball (240oF), when a little is tested in cold water.
- Stir in the coconut.
- Remove from the pan from the heat, add the essence of lemon and beat until it is creamy.
- Turn into a buttered tin.
- When cool cut into squares, and store in an airtight tin.
