How to make Cigarettes Russes:
These crunchy little biscuits are ideal to serve with ice cream. Space them out well on the baking tray and cook just a few at a time because once they crisp up you can no longer roll them.


Cigarettes Russes
2 egg whites
4oz caster sugar
2oz butter, melted
2oz plain flour, sifted
2-3 drops vanilla extract

- Beat the egg whites and sugar together until smooth.
- Add the butter.
- Add the flour.
- Spread in oblongs of about 4 inches by 2 inches very thinly on a greased and floured baking sheet.
- Bake at 200 degrees centigrade for 5-6 minutes.
- Remove from oven.
- Allow to stand for 1-2 seconds.
- Carefully ease an oblong from the tin.
- Place it upside down onto a floured surface.
- Roll the biscuit around the handle of a wooden spoon.
- Slide off the wooden spoon.
- Cool.
