How to make cider apple cake:
A moist apple and cider cake glazed with apricot jam and finished with a slightly crunchy coating of cider-flavoured sugar.


4oz butter
4oz caster/superfine sugar
2 eggs, beaten
6oz self raising flour, sieved
3 tablespoons medium dry cider
2 dessert apples, peeled, cored and sliced thinly
2 tablespoonfuls of apricot jam, melted to make a glaze
2oz icing/confectioner's sugar, sieved

- Cream the butter and sugar together until pale and fluffy,
- Beat in the eggs a little at a time.
- Fold in the flour.
- Fold in 2 tablespoons of the cider.
- Spoon the mixture into an 8 inch square cake tin.
- Place the apple slices on top and press down gently.
- Bake at 180 degrees C. for 35 minutes until risen and firm to the touch.
- Turn out onto a wire rack.
- Brush with the apricot glaze and leave to cool.
- Mix the icing sugar with the remaining cider and brush over the cake
- Leave to set then cut into 12 squares.
