Chunky Bean Soup Recipe

This chunky bean soup is packed full of delicious ingredients that will satiate hunger in the cold, winter months. Served with a nice chunk of homemade bread, spread generously with butter, it also makes a great vegetarian option.

Ingredients

  • 1 cup mixed beans, canned and ready to use if possible
  • 1 large onion, peeled and chopped
  • 1 medium sized carrot, peeled and diced
  • 2 tablespoons butter
  • 1 1/2 pints water
  • 2 cloves of garlic, crushed
  • 2 vegetable stock cubes
  • 2 tablespoons tomato paste
  • 1 teaspoon yeast extract
  • seasoning to taste
  • chopped parsley to garnish

Method

  1. Melt the butter.
  2. Fry the onion until transparent.
  3. Put the drained beans into the 1 1/2 pints of water with the remaining ingredients, except the parsley.
  4. Simmer for 1 hour, or until the beans are tender.
  5. Add seasoning to taste.
  6. Sprinkle with parsley.

Prep Time: 5 minutes

Cook Time: 75 minutes

Yield: 2-4 portions
