1 large onion, peeled and chopped
1 medium sized carrot, peeled and diced
2 tablespoons butter
1 1/2 pints water
2 cloves of garlic, crushed
2 vegetable stock cubes
2 tablespoons tomato paste
1 teaspoon yeast extract
seasoning to taste
chopped parsley to garnish
(see measure conversions for more information)
- Sauté the onion until transparent.
- Put the drained beans into the 1 1/2 pints of water with the remaining ingredients, except the parsley.
- Simmer for 1 hour, or until the beans are tender.
- Add seasoning to taste.
- Sprinkle with parsley.
