3oz golden syrup
2oz plain/all purpose flour
2oz sugar
1/2 teaspoon ground ginger
4oz sugar lumps
1oz almonds
1oz chopped mixed candid peel
6oz plain chocolate
(see measure conversions for more information)
- Heat gently until melted together.
- Put to one side for 30 minutes.
- Add the flour, sugar and ground ginger.
- Place teaspoonfuls of the mixture onto a greased baking sheet.
- Bake at 180 degrees C. for 10 minutes.
- Lift the cookies off the baking sheet very carefully.
- Put on a wire rack to cool.
- Put the sugar lumps into a heavy saucepan and heat until the sugar turns pale brown.
- Add the chopped almonds and peel, stir well.
- Working quickly spread the mixture onto the biscuits.
- Leave until set.
- Melt the chocolate in a bowl over hot water.
- Coat the other side of the cookies with the melted chocolate.

How to make chocolate gingers:
