How to make chocolate fudge:
A recipe for a fudge flavored with cocoa and vanilla. See Cooking with Sugar for information on the tricky process of boiling sugar.


2 1/2 cups sugar
1/4 pint milk
2 tablespoons cocoa
4 tablespoons butter, cut into small pieces
1/2 teaspoon vanilla extract
(see measure conversions for more information)


- Soak the sugar in the milk for 2 hours.
- Put the sugar mixture into a saucepan with the cocoa and butter.
- Stir over low heat until dissolved.
- Bring to the boil and keep boiling until the soft ball stage is reached.
- Turn into a small basin and add the vanilla.
- Cool a little and then beat until the mixture is thick and beginning to harden.
- Pour into a shallow buttered tin and cut into squares.
