1/4 teaspoon cream of tartar
1/2 cup plain chocolate, broken into small pieces
1/2 pint milk
1 tablespoon butter
1 teaspoon vanilla
2 tablespoons freshly grated coconut
(see measure conversions for more information)
- Bring to the boil, add the cream of tartar, and boil gently for 8 mins.
- Melt the butter and the chocolate and stir them in with the coconut.
- Bring to the boil again and boil for 2 minutes.
- Remove from the heat, stir in the vanilla, beat well for a minute or two, then turn into a well buttered tin or dish and cut in bars when cold.

How to make chocolate coconut candy:
This is a chocolate flavored version of coconut ice. Unusually it uses fresh coconut although desiccated would be acceptable. It is an example of an old fashioned tablet sweet. These were usually cut into portions from the tray as required.
Ingredients
3 cups sugar1/4 teaspoon cream of tartar
1/2 cup plain chocolate, broken into small pieces
1/2 pint milk
1 tablespoon butter
1 teaspoon vanilla

Method
- Put the sugar and milk in a heavy based saucepan.- Bring to the boil, add the cream of tartar, and boil gently for 8 mins.
- Melt the butter and the chocolate and stir them in with the coconut.
- Bring to the boil again and boil for 2 minutes.
- Remove from the heat, stir in the vanilla, beat well for a minute or two, then turn into a well buttered tin or dish and cut in bars when cold.
