1 1/2 teaspoons ground ginger
1 teaspoon salt
2oz fresh root ginger, peeled and shredded thinly
4 spring onions, pared and cut in pieces diagonally
1 tablespoon red wine vinegar
2 tablespoons dry sherry
3 tablespoons soy sauce
1 teaspoon sugar
3 tablespoons fresh orange juice
3 tablespoons vegetable oil
4 tablespoons corn flour
(see measure conversions for more information)
- Roll the fish in this mixture and leave for about 30 minutes.
- Mix half the root ginger and half the spring onions with the vinegar, sherry, soy sauce and orange juice.
- Heat the oil in a wok or a large frying pan with a lid.
- Cook the other half of the spring onions and ginger over a high heat for about 1 minute.
- Add the fish and cook for about 3 minutes moving it around the pan frequently.
- Add the vinegar, onion and ginger mixture.
- Bring to the boil.
- Reduce heat and put on lid.
- Simmer gently for a further 3-4 minutes.
- Serve with rice or noodles.
