This cooling and refreshing chilled cucumber soup makes a lovely change from hot, heavy soups and is a great option during the summer months.

You may like to use this recipe as part of a suggested menu:

Starter - Chilled Cucumber Soup
Main Course - Simple Sir Fry
Dessert - Apple Streusel


  • 1lb cucumber, peeled and chopped
  • 1/2lb spring onion, trimmed and finely chopped
  • 2oz butter
  • 1oz plain flour
  • 2 pints chicken stock
  • salt
  • freshly ground black pepper
(see measure conversions for more information on quantites)


  1. Melt the butter in a frying pan.
  2. Put in the spring onions and cucumber.
  3. Cook gently until softened.
  4. Stir in the flour.
  5. Add the stock, stirring all the time.
  6. Bring to the boil.
  7. Reduce heat.
  8. Simmer for 10 minutes.
  9. Allow to cool.
  10. Pass through a sieve.
  11. Cool and then chill before serving.

Prep Time: 5 minutes

Cook Time: 25 minutes

Yield: 2-4 portions
