How to make chilled cucumber soup:
Try this cooling, tasty soup as a starter this summer.





Ingredients

Chilled Cucumber Soup
1lb cucumber, peeled and chopped
1/2lb spring onion, trimmed and finely chopped
2oz butter
1oz plain flour
2 pints chicken stock
salt
freshly ground black pepper

Method

- Melt the butter in a frying pan.
- Put in the spring onions and cucumber.
- Cook gently until softened.
- Stir in the flour.
- Add the stock, stirring all the time.
- Bring to the boil.
- Reduce heat.
- Simmer for 10 minutes.
- Allow to cool.
- Pass through a sieve.
- Cool and then chill before serving.
