4 chicken quarters
2 large carrots, peeled and sliced
2 stalks celery, chopped
2 cups of hard cider
2 tablespoons Worcestershire sauce
seasoning
2 teaspoons cornstarch (optional)

- Add the chicken quarters and fry quickly until browned, turning once.
- Remove from the pan, and drain on absorbent paper towel.
- Place in a large flameproof casserole and add the vegetables, cider, Worcestershire sauce, and seasoning.
- Bring to the boil.
- Cover and cook at 180 degrees centigrade (see temperature conversions) for about 1 1/2 hours.
- Before serving, adjust the seasoning and thicken the sauce with cornstarch, if desired.
