How to make chicken and orange casserole:
A chicken casserole with the added flavor of oranges.



Ingredients

2 medium onions, peeled and quavered
2 stalks of celery, sliced
4 chicken portions, skinned
1 tablespoon chopped fresh herbs
grated rind and juice of 2 oranges
2/3 cup of bouillon
seasoning
(see measure conversions for more information)

Method

- Blanch the onions and celery in boiling water for 2 minutes.
- Put the chicken, celery and onion into a casserole dish.
- Sprinkle with the fresh herbs, orange rind and juice, and the bouillon.
- Season to taste.
- Cover tightly and cook in at 180 degrees centigrade (see temperature conversions) for about 1 hour, until the chicken is tender.
- Serve garnished with the orange slices and watercress.

Land For Food Production


I wonder just how much land it would take to feed a family of, say, 4? I know that if my family didn't buy fruit and veg we wouldn't have enough to eat but is self sufficiency down to amount of land or method of growing? Last year I overcrowded my small veg plot with counter-productive results like mildew and snail infestation that went unnoticed until we came to pick the tomatoes (all holes!). I wonder if anyone has ever been totally self providing or whether the local market and barter played...
