1/2 cup chopped up cooking chocolate
3/4 cup butter
3/4 cup caster/superfine sugar
3 eggs
few drops almond essence
2 cups cake flour
2 teaspoons orange juice
(see measure conversions for more information)
- Cream butter and sugar together.
- Add eggs and the almond essence.
- Fold in the flour and add cherries, chocolate and orange juice.
- Spread into the tin and bake at 180 degrees centigrade (see temperature conversions) for 25 minutes or until soft and springy to the touch.
- Cool and cut into fingers.

How to make cherry choc chip cake:
The Black Forest combination of cherries and chocolate in a cake is irresistible. This cake with its background hint of almond and orange is a delicious addition to any cooks repertoire.
Ingredients
1/2 cup glace cherries chopped1/2 cup chopped up cooking chocolate
3/4 cup butter

Method
- Grease and line an 11 by 7 in (28 by 18cm) tin.- Cream butter and sugar together.
- Add eggs and the almond essence.
- Fold in the flour and add cherries, chocolate and orange juice.
- Spread into the tin and bake at 180 degrees centigrade (see temperature conversions) for 25 minutes or until soft and springy to the touch.
- Cool and cut into fingers.
