1 level tablespoon flour
1/4 pint milk
2 eggs (separated)
2 tablespoons cheese, grated
salt and pepper
(see measure conversions for more information)
- Work the flour into the butter.
- Gradually add the milk, stirring all the time.
- Bring to the boil still stirring and allow the sauce to thicken.
- Remove from heat and add the cheese, salt and pepper and the beaten egg yolks.
- Whip the egg whites in a bowl until very stiff.
- Fold into the cheese sauce mix.
- Put into a deep, well greased oven proof dish.
- Cook at Mark 7 for 20 minutes (see temperature conversions).
- Serve immediately.
