Cheese and Spinach Quiche

How to make Cheese and Spinach Quiche:
A deliciously light and versatile starter which can be served hot or cold. It is a great way of incorportaing spinach into your diet. If you fancy something other than cheddar then most cheeses should work just as well.


Cheese and Spinach Quiche
shortcrust pastry made with:
12oz plain flour
2oz butter
1 1/2lbs spinach
1 onion, peeled and chopped
3 eggs
5floz single cream
2oz grated cheddar cheese
good pinch nutmeg
salt and pepper to taste

- Roll out the pastry and use to line a 9-inch flan case.
- Bake blind at about 180 degrees C. until the pastry is firm. Do not allow the pastry to brown.
- Fry the onion in the butter for about 5 minutes.
- Add the spinach to the onion and cook on a low heat for 5 minutes.
- Mix the eggs, cheese, nutmeg, salt and pepper into the cream.
- Remove the spinach onad onion from the heat.
- Mix the cream mixture into the spinach and onion.
- Spoon this mixture into the cooled flan case.
- Bake at 200 degrees C. for about 40 minutes.
- The filling should be firm to the touch and lightly browned.
- Serve hot or cold with a light salad.
