Celery Soup Recipe

Celery soup along with mushroom and tomato is one of the classic vegetable soups. Careful preparation of the celery is needed to avoid strings and fibre, so you may want to pass it thorugh a sieve before serving.

Ingredients

  • 1 pint vegetable stock
  • 1 pint milk
  • 1 onion
  • 2 heads celery, prepared and washed
  • 1 tablespoon butter
  • salt and black pepper
  • cream if liked
(see measure conversions for more information on quantites)

Method

  1. Cut the celery into small pieces.
  2. Peel and chop the onion.
  3. Melt the butter in a saucepan.
  4. Put in the onion and celery, and cook over gentle heat for 5 minutes, but do not let it brown.
  5. Add the stock.
  6. Season and simmer gently until the celery is quite soft.
  7. Place into blender and puree.
  8. Return puree to the saucepan and add the milk.
  9. Make very hot and serve.
  10. Cream can be added if liked.

Prep Time: 5 minutes

Cook Time: 35 minutes

Yield: 2-4 portions

make my homemade soup fry onion in butter an slice mushrooms or quaters add pepper and salt and soya sauce cook till liquid out of mushrooms thn place into a large pan with 2 oxo cubes top with water add table spoon of rice abring to boil then simmer for twenty mins serve hot

Celery soup is one of the winter classics but may I suggest adding one medium potato (diced) during the preparation stage as well as one dessert apple (Braeburn perhaps) cored & peeled and 2ozs (50gms) strong cheddar or a blue cheese during the cooking phase. I call it "after-dinner" soup and smile as friends start to realise why - celery, cheese, apple (getit?)

Can I include the leaves as well?

I have grown it myself and it seems a shame to throw so much of the bush away.

I guess the blender will shred them along with the stalks.

Made this soup last night - it is absolutely delicious!! It was my first attempt at making soup and I couldn't believe how easy it was to make and how lovely it tasted. I shall be looking out for some more soup recipes to try now, I'm hooked!

to prepare celery, peel it with a potato peeler, that way you get all the stringy bits off,start at the top and pulldown it works for me

Just about to make the soup for lunch. The reason I went to website from the google search because it said careful prep needed to avoid strings and fiber!!! But it doesn't tell you how to prepare the celery in trhe recipe any help please.

Really nice first time, as it was, but add onion, clove garlic, bay leaf,a small potato, and then, a tablespoonful of parmesan stirred in before serving. Mmmmm.....

I bought some celery this morning, came home found this recipe, made the soup as instructed...I have never made soup before, I could not believe how easy it is to make, and how good it tastes. Thanks

I am on a low sodium diet. Does anyone know how much sodium is in this receipe? Please email if you do know, and I really don't want to add cream or milk for I am also watching my choletrol and calories.
