How to make cauliflower savoury:
A sort of easy cauliflower soufflé.


1 small cauliflower, washed, broken into small florets and cooked
1/2 pint milk
2 tablespoons butter
4oz fresh breadcrumbs
2oz grated strong cheese
2 large eggs, separated and whites whisked until stiff
salt and freshly ground black pepper
extra breadcrumbs for topping

- Heat the milk in a saucepan over a low heat.
- Add the butter and breadcrumbs.
- Stir allowing the butter to melt and the mixture to thicken.
- Add the cheese and season well with salt and pepper.
- Beat in the egg yolks.
- cook very gently for another 2 minutes.
- Remove from the heat and fold in the cauliflower.
- Fold in the egg whites.
- Spoon the mixture into a well greased ovenproof dish and sprinkle the top with more breadcrumbs.
- Cook at 400 degrees F. for 20 - 25 minutes.
