How to make cardamom cake:
Usually associated with savoury dishes, ground cardomom is used here as an exotic flavouring for a cake.


6oz plain flour
2 teaspoons baking powder
2 teaspoons ground cardamom
4oz butter
6oz caster/superfine sugar
1 egg, beaten
4floz soured cream
(see measure conversions for more information)


- Sift the flour, baking soda and cardamom together.
- Rub in the butter until the mixture resembles breadcrumbs.
- Stir in the sugar.
- Set aside 4oz of the mixture.
- Add the egg and soured cream to the remaining mixture.
- Beat well.
- Pour into a greased 7 inch loose bottomed cake tin.
- Sprinkle with the reserved dry mixture.
- Bake in a preheated oven 180oC for 55 – 60 minutes or until well-risen and golden brown.
- Cool on wire rack.
