7oz sugar
1 egg
12oz plain/all purpose flour
1/4 teaspoon salt
grated rind of 1 lemon
2 tablespoons lemon juice
1/4 teaspoon bicarbonate of soda
1 1/2 teaspoons caraway seeds
(see measure conversions for more information)
- Add the egg.
- Add the sieved flour and salt, lemon rind and juice, bicarbonate of soda and caraway seeds.
- Mix to a firm dough and shape into a sausage shape about 2in diameter.
- Cut into slices of about half an inch thickness.
- Place on a well-greased baking tray.
- Bake at 200 degrees C. for about 10 minutes.
- Lift off the baking tray carefully and cool cookies on a wire rack.

How to make caraway cookies:
Caraway seeds with their aniseed flavour used to be used a lot in cake and biscuit recipes. They are less commonly used nowadays making these cookies an unusual treat.Ingredients

- Mix to a firm dough and shape into a sausage shape about 2in diameter.
- Cut into slices of about half an inch thickness.
- Place on a well-greased baking tray.
- Bake at 200 degrees C. for about 10 minutes.
