How to make caramel creams:
Creamy, homemade toffees. See Cooking with Sugar for information on the tricky process of boiling sugar.


1 cup sugar
1 tablespoon honey
2 tablespoons butter
1/4 pint hot water
(see measure conversions for more information)


- Boil together all the ingredients, except the lemon essence, till thick, stirring well.
- Beat till thick and creamy, and pour into a buttered dish.
- When cool, cut into squares.
